this super easy and delicios soup is a great dish to make during the colder season.
ingredients:
2 cans of 230g chickpeas, drained
2 potatoes
3 leeks, washed
olive oil
2 cloves of garlic
salt and pepper to taste
3/4 liter water
2 vegetable stock cubes
vegan parmesan cheese
instructions:
1. wash and chopp the leek. add it in a pan with some olive oil and chopped garlic. sweat it gently until tender.
2. add the drained chickpeas, chopped potatoes, the water and the stock cubes.
3. simmer for 15-20 min, make sure the potato is tender. add salt and pepper to your taste.
4. use a stick blender and blend it to your liking, smooth or chunky.
5. serve with a bit of grated vegan parmesan on top. enjoy!
