a vegan version of this delicious indian dish!
ingredients:
olive oil
1/2 cauliflower
1 red onion
2 potatoes
2 carrots
1 can tomato puré (140g)
100 ml coconut cream
a hand full peas
a hand full cashew nuts
2 tsp curry powder
2 tsp tumeric powder
1 tsp coriander powder
1 tsp cumin powder
salt and pepper to your liking
300 ml water
white rice
instructions:
1. chopp the vegetables into pieces and fry them in a pan with olive oil. (exept the peas)
2. when the vegetables are done frying add the tomate puré, water and sesonings.
3. take the sauce of the heat, when it has cooled down a little add the peas, cashews and coconut cream.
4. serve with rice and enjoy!
