this completly vegan cake is a perfect summer treat paired with sweet strawberries of the season.
ingredients:
2 2/3 cups flour
1 1/2 cups sugar
1 1/2 tsp baking soda
3/4 tsp salt
1 1/2 cups oat milk
1/2 cup sunflower oil
1 tbsp apple cider vinegar
1 tsp vanilla sugar
5 tbsp lemon juice
2 tbsp lemon zest
instructions:
1. preheat the oven to 350°f / 180°c.
2. sift the flour into a bowl and add the sugar, baking soda, salt and vanilla sugar. then add the oat milk, oil, vinegar, lemon juice and zest. whisk till combined.
3. prepare a cake pan by greasing it with some oil. add in the batter and bake the cake for 40 min, till a toothpick comes out dry of the center.
