a perfect dish to eat in the autumn season on a rainy day, warm and comforting
ingredients:
1 red onion
2 carrots
a hand full of brussel sprouts
1 potato
a few bay leafs
1 tbsp tomato puré
a small container of cherry tomatoes
2 cloves of garlic
100g of small shaped pasta
400g white beans
1 l water with a vegetable stock cube
seasonings: oregano, basil, garlic powder, salt and pepper
instructions:
1. chop the onion, carrots, brussel sprouts and potato into small pieces and fry them in olive oil
2. then add the chopes cherry tomatoes and garlic, fry
3. once the vegetables are soft add the tomato puré, beans and water
4. season to taste
5. bring to a boil and add the pasta
6. let the soup simmer til the pasta is done
